Healthy dessert recipes might seem like an oxymoron, but it is possible to indulge in something as dessert that won’t completely sabotage your diet or isn’t all sugar and high fat.

It wasn’t easy to create and find these healthy dessert recipes for you – it took months of experimenting – and a lot of bad tasting desserts that even my husband wouldn’t eat – so I hope you enjoy them! (Trying to make sugar free whole grain cookie recipes that are actually edible is still something I am struggling to do!)


Fruit and Yogurt Parfait

For each parfait you will need:
1 cup of plain no fat or low fat yogurt
1/2 cup strawberries, sliced or cut into 4ths and with tops removed
1/2 cup blueberries
Optional: Crushed Nuts for topping, 1 tsp Splenda or other sugar substitute for the yogurt

Directions: Mix the teaspoon of Splenda with the yogurt if you are using it. Layer in a tall glass or cup yogurt, fruit, more yogurt, more fruit, and a final thin layer of yogurt on top. Garnish with nuts and serve immediately or chill covered for up to 6 hours.

Sugar Free Chocolate Mint Mousse


2 cups of Skim Milk
3-4 sprigs of mint
1 box of instant sugar free chocolate pudding
Optional: Nuts

Directions:Prepare pudding as directed on box with milk. Let set for 1 hr, serve in individual bowls and garnish with mint sprigs and nuts if desired.

Grilled (or baked) Fruit Kabobs

Grilled fruit kabobs is a very unique healthy dessert recipe idea!

You will need:
Grilling Skewers
Fresh Apples, Pineapples, Pears, and/or peaches, cut into chunks or slices
Optional: Cinnamon

Directions: Place fruit on skewers and grill until the fruit is cooked but not mushy. Be sure the grill is clean – you won’t want it to taste like a hamburger! You may also want to spray the grill with a non stick cooking spray before using it so the fruit will not stick. Alternatively, you may also bake or microwave the fruit and while not as unique, still pretty tasty and a healthy dessert!

Peanut Butter Peanut Coated Bananas

You will need:
Banana peeled and cut into quarters (cut in half lengthwise and then in half again unless it is a very small banana)
No sugar added peanut butter
Optional: Chopped nuts, Sugar free hot chocolate mix

Directions:Lightly spread peanut butter all over the banana. Mix the hot chocolate powder and peanuts and then roll the banana to coat. Serve immediately.

Frozen Fruit Pops
Any fruit of your choice
Popsicle sticks

Directions: Take any fruit of your choice and depending on size and shape cut and peel into bite sized chunks or make Popsicle sized. Stick a Popsicle stick on one end and place on a wax paper covered cookie sheet or freezer safe dish. Freeze until frozen, then serve and enjoy.
