3 Awesome Tomato Recipes to Try

I LOVE tomatoes and am always looking for awesome tomato recipes to try. And it just so happens we got our first batch of homegrown tomatoes this week. I decided to share a few of my favorite tomato recipes and would love to hear of yours if you’d like to share them.
Tuna Stuffed Tomatoes
You will need:
2 Medium to Large Sized Tomatoes, with tops cut off and seeds scooped out
1 Can of Tuna, packed in water and drained
1 tbsp of mayo or mustard (low fat and optional – I personally don’t do mayo!)
Chopped celery & onions to taste
Shredded mozzarella or cheddar cheese
Salt & pepper to taste
Mix all of ingredients except the tomato cups together. Scoop into tomato and serve with whole wheat toast. (You can also use variations of this for great sandwiches, whole wheat tortilla wraps and more)
Tomato Pesto Sandwich
You will need:
2 slices of whole grain bread of your choice
1 tomato, sliced
Pesto to taste
1 thick slice (1/4 of an inch or so) of Low Fat Mozzarella Cheese
Basil to taste
Put all the ingredients between two slices of bread (it’s not really that hard to figure out how to make a sandwich, is it?) and enjoy. You can add peppers, chicken, or spinach to this if you like to experiment.
Tomato Salad
You will need:
1 Tomato, sliced or chopped (who am I to tell you how to cut your veggies?)
1 Green or Red Pepper, diced
1/4 cup broccoli
1/4 cup shredded carrots
1/2 cup of your favorite shredded low fat cheese
Enough no/low fat Italian dressing (will depend on how many veggies you use)
Dill, Basil, Garlic, Salt & Pepper to taste (Just because I like these things, doesn’t mean you will!)
Mix all ingredients and serve.
