This simple microwave omelet recipe makes it easy to get breakfast ready when you want a quick healthy breakfast. You can make an omelet in the microwave in just a couple of minutes, depending on the size and wattage of your microwave!

Eating breakfast is so very important, and making sure that it is well balanced will get you off to a healthy start each and every day. I never realized you could make an omelet in the microwave until one day I decided when short on time I would try cooking my eggs in the microwave instead of on our stove. Cooking in your microwave also conserves energy!


To Make Your Microwave Omelet, just follow the steps below:

You will need:
1 egg
Your choice of pre-cut veggies (I like spinach, green peppers, and onions, but you can add any others you like instead. You can either cut fresh vegetables the night before, or use frozen vegetables instead)
1/2 tsp low/no fat margarine

Directions: Break the egg into a small bowl and beat with fork until the yolk and the egg white have combined. Then add veggies & margarine to the egg. Microwave for 30 seconds, stir, then microwave another 30 seconds or until the egg is big and fluffy. (Microwave ovens and cooking times may vary!)

Serve with whole grain toast (sugar free jelly optional) and glass of milk. You can also opt to add a little shredded cheese to your omelet if you are a fan of cheese, or like me tend to believe an omelet is just not an omelet without a little hint of cheese! You can also add salt and pepper to taste.


Need some other ideas on what to put in your omelet? You could put in turkey bacon or sausage, lean ham, sliced turkey pieces, broccoli, onions, asparagus, mushrooms, hot peppers, salsa and more! (Though if you do decide to add salsa or tomatoes to your omelet, you may want to add it after the egg has cooked completely – I’ve had some issues where sometimes tomatoes don’t do so well in the microwave!
