Cooking a healthy dinner doesn’t need to take a lot of time or a lot of dishes. This easy one pot veggie spaghetti recipe combines a lot of flavor – with no guilt whatsoever. This recipe serves 4 – so make it for the whole family to enjoy or save the leftovers for tomorrow’s lunch.
Ingredients:
2 Cups Whole Grain Spaghetti
12 frozen pre-made lean meatballs or 1 cup of frozen pre-cooked chicken breast (The chicken is healthier for you, but what’s spaghetti without the meatballs if you really want them?)
1 Cup Frozen Spinach
1 Cup Frozen Squash/Red Pepper/Onion/Carrot/Mushroom Mix
1 Can Diced Tomatoes
1 Can Tomato Sauce
Garlic, Pepper, Onion Powder, Basil, Oregano, and Parsley to taste
Directions:
Boil water. Add pasta, veggies, and meatballs (or chicken) and cook until pasta is done and veggies/meatballs are cooked through. Drain water. Add diced tomatoes and tomato sauce. Stir in desired seasonings. Serve with 1 tbsp grated Parmesan cheese.
